Portuguese Sweet Bread ~ Gluten Free

Portuguese Sweet Bread (Gluten Free) Ingredient 1 ¼ cups milk (dairy, rice, nut, soy) ¼ cup butter or dairy free margarine 1 Tbsp. yeast   3 ½ cups Mama’s Almond or Coconut Blend Flour 1 ½ tsp. xanthan gum 1 tsp. salt ¾ cup sugar   3 eggs 1 tsp. cider vinegar   1 egg for basting   Directions Warm milk and butter until melted.  Remove from heat.  Allow to cool until about 115°.   Sprinkle yeast over top of milk mixture.  Set for 3-4 minutes.    In a mixing bowl add flour, xanthan gum, salt and sugar.  With mixer running on low speed, slowly pour in yeast mixture.  Add eggs, one at a time beating well after each addition.  Add cider vinegar.  Beat...

It broke my heart when we walked by the Girl Scouts selling cookies this year. It has never been an issue in the past, but now that Lexie is almost 7, I see the disappointment in her eyes when sherealizes that they are not gluten free. The sweet little girl she is says, “Mom, we should get some for Cassie, because she really likes them.” I respond, “Lexie, that probably wouldn’t be fair since you can’t eat them too.” Lexie in her sweet little voice, “That’s okay mom, you can just make me some that are gluten free.” Being the sucker I am, oh, I mean the good mom that I am, I told her I would.

Gluten Free Sausage Balls — Party Appetizer

Make the with Italian Sausage or Turkey Sausage, Easy to Make and a Fan Favorite! Well this is my first “New” recipe that I have created since my brain surgery in November. This was a modified recipe, based off a sausage roll my mom made using Bisquick growing up. I made a few changes, using Mama’s Pancake Mix instead (to be gluten free), using an Italian Sausage verses the pork breakfast sausage, made a turkey version with added spices for those who don’t like pork sausage, (like my kids), and added green onions. Cottage Dill Bread

Cottage Dill Bread, another classic bread recipe that is perfect anytime of day. This is a perfect bread to serve at breakfast or brunch, or make sandwiches with it for lunch. Typically, Cottage Dill Bread is made in a round shape. To achieve the round shape for gluten free breads, bake in a 7 or 8 inch round casserole dish.  A 8 inch round Corningware Dish works great or you could used a round springform pan, or deep sided pie pan.

Ingredients: 1 batch Mama’s Buttermilk Biscuits Page 55 of GFM’s Best Baking Recipes Cookbookor Mama’s Easy Buttermilk Biscuits Below 1 lb. package gluten free sausage (mild)4 Tbsp. Mama’s Almond or Coconut Blend Flour3 cups Milk (dairy or rice)Salt and Pepper to taste Make a batch of GF Biscuits. Gluten Free Mama’s Tater Tot Casserole and Instant Cream Soup

Every once in a while you just need something easy to make with a pound of hamburger and something the kids will eat too. Tater Tot Casserole is one of those old time favorites. A lot of people think they cannot enjoy this casserole and many others like it because it uses Condensed Cream of Mushroom Soup. Hungry for biscuits? Gluten Free Mama’s Cheddar Chive Biscuits are A-mazing with a capital A. The combination of the flaxseed and cheddar cheese make these biscuits burst with flavor. Gluten Free Pita Bread 1 pkg. Mama’s Pizza Crust (Remove ¼ cup of mix and set aside) 1¼ cups warm water1 Tbsp. yeast (or use yeast packet included with mix)1 tsp. sugar or honey 1 egg2 Tbsp. olive oil Directions: In a mixing bowl, add Mama’s Pizza Mix. Mama’s Sesame French Bread ~ Gluten & Egg Free

  1¼ cups warm water 1 Tbsp. yeast 1 tsp. sugar or honey   3 cups Mama’s Almond or Coconut Blend Flour 1¾ tsp. xanthan gum 1 tsp. salt 1 Tbsp. sugar   ¼ cup light olive oil or melted butter  2 Tbsp. ground flax seed and ½ cup water simmered for 5 minutes.  OR 2 eggs 1 tsp.  cider vinegar 2 Tbsp. sesame seeds, optional   Directions  Preheat oven to 400°.   In a mixing bowl, combine flour, xanthan gum, salt and sugar.    Mix together warm water, yeast and sugar and set aside until foamy.    With mixer on low speed pour in yeast mixture, add melted butter, flax mixture and cider vinegar.  Mix on high speed for 2-3 minutes.    Spread into desired pan.  Run your spatula or...

Mama’s Gluten Free Flax Pancakes

Who doesn’t like breakfast, and who doesn’t like breakfast for dinner.  Better yet, who doesn’t like Pancakes?  I know my family and I can have pancakes anytime of day or night.  Did you know you can do all kinds of variations of pancakes with Mama’s Pancake Mix?  You could add chocolate chips, blueberries, or how about 1 tsp. cinnamon with 1 cup diced and peeled apples.  My kids love m&m’s in theirs.  Add 1/4 cup of cocoa with 1 Tbsp. of Instant Espresso and you have Mocha Pancakes.  Or you just keep it simple add some ground flax and whole flax for a healthy start to your day.

Sweet Pepper Monterey Quiche

When I need an appetizer to bring to a party or want to have something out for guests to munch on before dinner parties, this is my go to appetizer.
