It broke my heart when we walked by the Girl Scouts selling cookies this year. It has never been an issue in the past, but now that Lexie is almost 7, I see the disappointment in her eyes when sherealizes that they are not gluten free. The sweet little girl she is says, “Mom, we should get some for Cassie, because she really likes them.” I respond, “Lexie, that probably wouldn’t be fair since you can’t eat them too.” Lexie in her sweet little voice, “That’s okay mom, you can just make me some that are gluten free.” Being the sucker I am, oh, I mean the good mom that I am, I told her I would.

Gluten Free Pita Bread

Gluten Free Pita Bread 1 pkg. Mama’s Pizza Crust (Remove ¼ cup of mix and set aside) 1¼ cups warm water1 Tbsp. yeast (or use yeast packet included with mix)1 tsp. sugar or honey 1 egg2 Tbsp. olive oil Directions: In a mixing bowl, add Mama’s Pizza Mix. Remove ¼ cup of mix and set aside.In a liquid measuring cup measure out warm water, add yeast packet and sugar. Mix together and set aside until foamy.With mixer running on low speed, pour in yeast mixture. Add egg and olive oil. Mix on high speed for 2-3 minutes. Gluten Free Raspberry Thumbprint Cookies

Raspberry Thumbprint Cookies~Using Mama’s Cookie Mix Ingredients1 PKG Mama’s Sugar Cookie Mix ¾ cup butter or dairy free margarine½ tsp. almond extract 1 egg white1-2 Tbsp milk (dairy, rice, nut, soy)Raspberry Jam (Simply fruit by Smuckers recommended)  Glaze:1 cup powdered sugar ½ tsp. almond extract1-2 Tbsp. milk (dairy, rice, nut, soy) or waterDirectionsPreheat oven to 350°.Cream butter or margarine with almond extract. Tomato Soup is the Traditional Comfort Food.  This is Mama’s take on Tomato Basil soup that is quick to make, delicious and a little more on the gourmet side versus the Campbell’s Tomato Soup we grew up on.  This is delicious served with Gluten Free Grilled Cheese Sandwiches.  Or try it with Mama’s Tomato Basil Biscuits. Both are a hit for families and crowds and pair nicely together. When your child has a food allergy/intolerance or medical condition it can add another level of worry and preparation for heading back to school.
