Gluten Free Pumpkin Brownies~Egg Free This is a simple and easy brownie that is egg free and perfect any time of the year.  The pumpkin not only acts as a pumpkin flavor to this brownie, it acts as the egg replacer, making these moist and delicious.  You can sprinkle them with powdered sugar after cooled or spread cream cheese frosting over the top.

Lemon Zucchini Bread (Dairy Free)

Lemon Zucchini Bread (Dairy Free) 1¾ cups Mama’s Almond Blend or Coconut Blend Flour1 tsp. ground ginger2 tsp. baking powder¼ tsp. baking soda½ tsp. salt1½ tsp. xanthan gum½ cup walnuts (optional) ⅔ cup oil (canola, safflower, soybean)2 Tbsp. fresh lemon juice2 eggs1¼ cups zucchini, grated1 cup sugar1 tsp. lemon zest Glaze ½ cup powdered sugar, 1 Tbsp. lemon juice, 1 tsp. lemon zest Directions Preheat oven to 350 °. In a small bowl combine flour, ginger, baking powder, baking soda, salt, xanthan gum and walnuts. Mix together and set aside. It took me three years to convert Grandma Bette’s recipe to gluten free so that Lexie and I can enjoy it too. The first year and second year it did not get Grandma Bette’s seal of approval. She said it was good but too dry. This final recipe, she said I nailed it by adding a little more butter and a little less flour.

The crispy crunch with the gooey melted marshmallow holding it all together scream childhood as you lick your sticky fingers after the last bite.
