Mama’s Chocolate Chip Cookies

Sometimes it is the simple things in life that make me happy, like chocolate chip cookies and a tall glass of cold milk. Are you a cookie dough eater or a cookie eater???  I think I am both!  So are my kids.  Against the rule of not eating raw eggs, we still enjoy a spoonful of cookie dough every time we make cookies.  Then of course we have to lick the bowl too!

G-Free Oatmeal Raspberry BarsDelicious! One word describes this tasty treat. I think this Raspberry Bar heads to the top of my favorites list. Gracie, my oldest daughter and I, tried to convince my other daughters and their friends that they would not like these bars. Unfortunately, our tactics did not work and we eventually had to give in and share. There is only one slice of these delicious bars setting on my beautiful glass cake plate. Now I am left to figure out a place where I can hide it so that I can enjoy it tomorrow.

Lebkuchan Cookies

This Christmas celebration we bring to you a traditional German Christmas Cookie, Lebkuchen Cookies.  Actually, it is referred to as a biscuit, but we americans refer to it as a cookie.  Lebkuchen cookies come in different flavors and shapes, most common the shape being brown and uses spices like citron, cloves, cinnamon, anise seed, walnuts, almonds, raisins, and candied fruit.

Gluten Free Lace Cookies

Three years ago, I showed up at a booksigning in Olympia Washington for my first cookbook.  Unbeknownst to me, the store told the customers ahead of time that I was going to do a lecture.  So here I am with all my “booksigning” stuff set up including samples and what not, and customers start walking through the doors with their notebooks.  They asked me where is the class?  I said there is no class, just a booksigning.

Peach Berry Cobbler ~ Gluten Free

Cobbler is one of those few desserts that speak family, speak comfort, speak tradition to me. Whenever we would go to grandmas house for dinner, she always had her famous Peach Cobbler for dessert. Grandma made hers the southern way, with an amazing biscuit topping. It was D-elicious! If I ever find her recipe, I will convert it gluten free for you.

I was walking through the grocery store one day and saw this amazing Mixed Berry Crostata on the front of a Better Homes and Gardens Special Issue Magazine called Cooks Secret. Mama’s Gluten Free Chocolate Chip Cookies with Brown Rice Syrup

Ingredients ⅓ cup butter or dairy free margarine, room temp.1 cup Organic Brown Rice Syrup (Lundberg Sweet Dreams® Brown Rice Syrup)½ cup mashed banana1 large egg1 tsp. vanilla1¾ cups Mama’s Almond or Coconut Blend Flour½ tsp. xanthan gum or guar gum½ tsp. baking powder ( Hains Pure Foods Featherweight Baking Powder to be corn free)½ tsp. salt1 cup Organic Cocoa Nibs, carob chips or Chocolate Chips (C.C. will have sugar) DirectionsPreheat oven to 375°. Line a cookie sheet with parchment paper or lightly spray baking sheet with cooking spray. In a small bowl, combine flour, xanthan gum or guar gum, baking powder and salt. Set aside. I love baked fruit crisps any time of year. They are especially nice when fresh fruit is in season, but you can certainly make them all year round with frozen fruit. Gluten Free Chocolate Chip Cheesecake with Dark Chocolate Espresso Crust

Today I have for you a Gluten Free Chocolate Chip Cheesecake with Dark Chocolate Espresso Crust. I have been craving cheesecake and I remember eating chocolate chip cheesecake from way back in my early 20’s, so I thought I would make one for you this week. I baked it with a Dark Chocolate Espresso flavored crust, like a pie crust.
