Raw Apple Dessert with Brown Butter Frosting

Apples are in season and fall is the perfect time for baked apple desserts.  I love this time of year having my home filled with the aroma of apples and cinnamon.  This is another great family recipe converted for a Gluten Free Mama and G-Free Foodie Fan.  Enjoy!

Raw Apple Dessert with Brown Butter Frosting

Ingredients:

6 Tbsp. butter
1 cup sugar
2 eggs
1 Tbsp. Pure Maple syrup or 1 tsp. maple flavoring

1 cup Mama’s Almond or Coconut Blend Flour 
½ tsp. xanthan gum
½ tsp. cinnamon
1½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt

2 cups tart apples, diced
½ cup walnuts or pecans, chopped

Brown Butter Frosting

Ingredients:

½ cup butter
2 cups powdered sugar
2 tsp. vanilla
2-4 Tbsp. hot water

Directions: Preheat oven to 350°. Grease and flour 8 x 8 square baking pan or a 9 inch round pan.

Dice apples. Place in bowl of cold water with a couple pinches of salt to prevent browning.

In a medium bowl combine flour, xanthan gum, cinnamon, baking powder, baking soda and salt.

In a mixing bowl, cream butter and sugar. Add eggs and maple syrup. Mix well. Remove mixing bowl from mixer. Fold in flour mixture. Rinse and drain apples. Fold in apples and nuts. Spread evenly into pan. Bake for 45-50 minutes or until toothpick comes out clean. Allow to cool for about 15-30 minutes.

Flip out onto a serving plate. Spread Brown Butter Frosting over the top. Serve warm.

Directions for Brown Butter Frosting:
In a small sauce pan, brown butter over medium heat. Remove from heat and stir in powdered sugar and vanilla. Stir vigorously. Add 1 Tbsp. at a time of hot water until frosting reaches a spreading consistency.

Gluten Free Mama Note:  The original recipe included this frosting/sauce below.  I couldn’t find black walnut flavoring.  The first time I made it I used the sauce and replaced the flavoring with 2 Tbsp. of maple syrup.  I wasn’t in love with the sauce.  While it was warm it was okay.  But as it cooled, I felt it was not as desirable as I would have liked.  So that is why I made the second one with the Brown Butter Frosting.  The Brown Butter Frosting just gave it an extra special touch and is oh so delicious and perfect for a fall dessert.  Please feel free to use whichever frosting you like.  They are both gluten free.

Original Sauce:

1/4 cup brown sugar
2 tablespoons cornstarch
2 tablespoons butter or margarine
1 teaspoon vanilla
1/4 teaspoon black walnut flavoring  (Gluten Free Mama used 2 Tbsp. Pure Maple Syrup or 1 tsp. maple flavoring)
1 cup boiling water

Blend sugar and cornstarch. Add butter or margarine, flavorings and boiling water. Cook until clear and serve hot over the baked dessert.
