Hummus Pizza

Okay…if you like hummus, roasted veggies and flatbread then you are in for a treat! Two words to describe this interesting take on pizza is DE-LISH.  No seriously, it is.  The Kalamata olives and feta make it extra special too.  Make it without the feta and it is dairy free.  The only thing that I didn’t like about this pizza is that I had no one to share it with.  Now I am just going to have to make it again so that my friends can enjoy.

Gluten Free Grilled Monte Cristo Sandwiches

Grilled Monte Cristo Sandwiches~Gluten Free The very first time I sunk my taste buds into a Monte Cristo Sandwich, well even the first time I heard of a Monte Cristo Sandwich, was on the Seattle, WA Dinner Train during the Saturday Morning Brunch Ride.  It was a special treat, as I had won the trip along with my co-workers at Sea-First Bank for meeting a sales goal for the bank.  It was my first time on the famous dinner train.  I was 18, young, inexperienced in fine dining, and was a bit out of my comfort zone on this fun and special day.  Being the youngest of my co-workers, just out of high school and living on my own for...

Gluten Free Cottage Dill Popovers

Popovers are great for breakfast, lunch, dinner or even snack! They are easy to make and they appease even the pickiest of eaters. I have had some extra fresh dill in my house all week and decided I needed to use it up before it went bad. My favorite ingredient paired with dill is small curd cottage cheese. It may not sound appetizing when you hear it…but believe me, it is GOOD!

luten Free Challah Bread

Gluten Free Challah Bread This fall, I was walking through Seattle’s Famous Pike Place Market.  As I was passing many bakeries and smelling the sweet aroma of baked goods that I could not eat, I passed by a bakery with the most beautiful breads in the window.  One of them was Challah bread.  My mouth watered as I looked at it and I made it a goal to make this bread gluten free.  With Easter and the Passover coming up, I thought there was no better time to create it.  Challah bread is traditional dairy free.  It is also made in a braid of 6 braids.  It is difficult to form braids with gluten free breads and still have the bread...

Gluten Free Lefse

It took me three years to convert Grandma Bette’s recipe to gluten free so that Lexie and I can enjoy it too. The first year and second year it did not get Grandma Bette’s seal of approval. It’s officially spring time in Montana!  The sun is shining, the big blue sky Montana is famous for stretches for miles, the view of the mission mountains is spectacular, the lake is glistening, and the flowers and trees are beginning to blossom and pop out of the ground.  It makes me happy. I have been waking up, opening all the curtains in the house so that the sun can peep in through the windows.  I don’t get out of the house much due to my illness, so being able to have a little sun popping through brings me joy.  Some mornings I like to grab a quick snack and sit on the porch and let the sun soak in as...

Garlic Hummus with Multi-Seed Flatbread ~ Gluten Free

Multi Seed Flat Bread ~ Gluten and Dairy FreeAnd Mama’s Hummus My friends and I have been on a hummus kick.  Nearly every time we see each other someone has made hummus.  The recipe was passed on from a friend, to a friend, to a friend, to a friend.  Some of them have secret ingredients, some of them add less garlic (not me) and some add more or less oil and lemon juice.  We all seem to have our way of making it.  Nonetheless, it is delicious and healthy!  Hummus is great served with chips, crackers, veggies and pita bread.   Being that Pita Bread is one of my favorite breads for dip I decided to create a gluten free version.  ...
