Gluten Free Cottage Dill Biscuits

Easy to make, Great Texture, Delicious Flavor!

2 cups Mama’s Almond or Coconut Blend Flour
1/2 tsp. xanthan gum
1/2 tsp. salt
2 tsp. baking powder
1 Tbsp. sugar
1 Tbsp. fresh dill, minced  or 2 tsp. dried
2 Tbsp. fresh chives, minced or 1 Tbsp. dried
1 cup small curd cottage cheese
1 egg
6 Tbsp. butter or dairy free margarine, partially melted.
1/2 cup milk, (dairy, rice, nut, soy)

Preheat oven to 400 degrees.

In a medium bowl combine, flour, xanthan gum, salt, baking powder and sugar.  Mix together well.  Add dill, chives, cottage cheese, egg and partially melted butter.  Gently mix to combine adding a little bit of milk at a time until all ingredients are mixed in well.

Using a 2 inch scoop, scoop about 10 scoop onto an ungreased baking sheet.  With lightly floured hands gently press each scoop into a flattened circle about 3/4 – 1 inch thick.  Bake for 17-20 minutes.  They will bounce back lightly when done.

Allow to cool for 1-2 minutes before removing to cooling rack or serving dish.

Easy as 1, 2, 3!  Enjoy!!

Variation:  For a fresh, zesty flavor, add 1 tsp. orange zest, optional
