Who doesn’t like breakfast, and who doesn’t like breakfast for dinner. Better yet, who doesn’t like Pancakes? I know my family and I can have pancakes anytime of day or night. Did you know you can do all kinds of variations of pancakes with Mama’s Pancake Mix? You could add chocolate chips, blueberries, or how about 1 tsp. cinnamon with 1 cup diced and peeled apples. My kids love m&m’s in theirs. Add 1/4 cup of cocoa with 1 Tbsp. of Instant Espresso and you have Mocha Pancakes. Or you just keep it simple add some ground flax and whole flax for a healthy start to your day. Great way to start off any day! I love to add flax to my pancakes so I will first show you this recipe. Later today, for dinner I will make the Mocha Pancakes and share with you. Flax pancakes are High in Omega 3’s, and gives it a nice flavor and I love the crunch of the whole seeds. If you have kids, just grind it up and they will like it too. These are also good with any kind of berries added to them, and Oh So Delicious! Use Mama’s Pancake mix for a quick to make pancake or follow the pancake recipes in both of my cookbooks.
Flax Pancakes
1 1/2 cups Mama’s Pancake Mix
1/2 cup ground flax seed
3 Tbsp. whole flax seed
2 eggs *
1 1/4 cups milk (dairy, rice, nut, soy)
* For egg free use 1/4 applesauce and 1 1/2 cup milk)
Mix all ingredients. Heat skillet over medium heat. Drop 1/3 cup batter onto buttered skillet forming a circle with back of measuring cup. Flip pancakes when bubbles begin to form and underside is golden brown. Cook until both sides are golden brown.
Serve Warm. Makes 8-10 pancakes
Note: Add blueberries for a burst of antioxidants!
