Decadent Dark Chocolate Cake with Bittersweet Ganache ~Gluten Free

This cake is so decadent and rich and the texture is amazing, not to mention it is gluten free!!! Christmas Joy Cupcake (Gluten Free Dark Chocolate Cupcake with Chocolate Ganache Frosting)

Christmas Joy…( Dark Chocolate Cupcake with Chocolate Ganache   or Chocolate Mousse)Ingredients 2 cups Mama’s Almond or Coconut Blend Flour2 tsp. baking powder1/2 tsp. salt3/4 tsp. xanthan gum1/2 cup dark chocolate cocoa 3/4 cup butter or dairy free butter, room temp.1 1/4 cup sugar2 tsp. vanilla3 eggs1 1/4 cups milk (dairy, rice, nut, soy) 1 cup chocolate chips or white chocolate chips DirectionsPreheat oven to 350 °.  Put desired cupcake liners in cupcake pan.In a small bowl, combine flour, baking powder, salt, xanthan gum and cocoa.  Mix and set aside.In a mixing bowl, cream butter.  Add sugar and vanilla and mix well.  Scrape down sides of bowl.  Add one egg at a time, mixing well after each addition.  Scrape down sides of bowl.  Alternate...

Gluten Free Sausage Balls — Party Appetizer

Make the with Italian Sausage or Turkey Sausage, Easy to Make and a Fan Favorite! Well this is my first “New” recipe that I have created since my brain surgery in November. This was a modified recipe, based off a sausage roll my mom made using Bisquick growing up. I made a few changes, using Mama’s Pancake Mix instead (to be gluten free), using an Italian Sausage verses the pork breakfast sausage, made a turkey version with added spices for those who don’t like pork sausage, (like my kids), and added green onions. Gluten Free Whoopie Pies ~ Heart Shaped for Valentines Day!

Whoopie Pies are super easy to make.  There are all sorts of Whoopie Pie pans available on the market.  Basically it looks like thin baking sheet and has 1/2 inch shapes formed in it.  I used the Heart Shaped Pan for my pies today.  If you don’t have a pan, no worries, you can still make these.  Just use a 1 inch scoop, and drop a scoop of batter onto a cake pan forming a medium sized round circle about, 1 1/2-2 inches in diameter.

Espresso Pumpkin Bread

Raspberry Thumbprint Cookies~Using Mama’s Cookie Mix Ingredients1 PKG Mama’s Sugar Cookie Mix ¾ cup butter or dairy free margarine½ tsp. almond extract 1 egg white1-2 Tbsp milk (dairy, rice, nut, soy)Raspberry Jam (Simply fruit by Smuckers recommended)  Glaze:1 cup powdered sugar ½ tsp. almond extract1-2 Tbsp. milk (dairy, rice, nut, soy) or waterDirectionsPreheat oven to 350°.Cream butter or margarine with almond extract. Add Mama’s Cookie Mix and egg white.  Mix on low for 1-2 minutes.  Scrape down sides of bowl.
