Hungry for biscuits? Gluten Free Mama’s Cheddar Chive Biscuits are A-mazing with a capital A. The combination of the flaxseed and cheddar cheese make these biscuits burst with flavor. I ate 3 of them myself! You can make these without eggs if you are egg free. Roll out slightly thicker. I am thinking tomorrow, I will slice in half and add sliced turkey, hummus and red pepper for a tasty sandwich. I hope you enjoy these delightful gluten free biscuits as much as I am.
1½ cups Mama’s Almond or Coconut Blend Flour
½ cup ground golden flaxseed
1 Tbsp. baking powder
½ tsp. salt
¾ tsp. xanthan gum
1 Tbsp. sugar (optional)
2 Tbsp. fresh or dried chives
¼ tsp. dried mustard
¾ cheddar cheese
6 Tbsp. butter, dairy free margarine or Spectrum shortening, partially melted
1 egg (optional)
¾ cup milk (dairy, rice, nut, soy)
Directions: Preheat oven to 450°.
In a large bowl combine flour, baking powder, salt, xanthan gum, sugar, chives, and dried mustard. Make a well in the center.
Pour in partially melted butter, egg and milk. Cut ingredients in with fork until combined. Don’t overwork dough.
Place dough on generously floured surface or pastry mat. Sprinkle top generously with flour. Gently roll out to about ½inch thickness. Cut biscuits out with a biscuit cutter. Place on ungreased baking sheet.
Bake for 14-15 minutes on an upper rack in oven or until golden brown.
GFM Tip: If desired baste with melted butter just after removing from oven.
