Dr. Stephen Wangen recently sent me a copy of his new book, “Healthier Without Wheat”. It took me a couple of weeks to read it as I wanted to really digest what he was saying and took one to two chapters at a time, trying to retain as much of the information as possible. Yes, It is true a gluten free pie won third place amongst other pies in a fun Pie Contest Bake-off. Our church hosted an Old Fashioned Picnic a couple of Sundays ago. There was a big Pie Baking Contest as well as other contests. I decided to enter my pie. I was technically in charge of organization of the pie contest but wanted to have the opportunity to enter my pie. So we set it up so the pies would be submitted without names/anonymously and that I would have no part in the judging or tallying of scores. I was just the announcer/organizer. I received my copy of Triumph Dinings “The Essential Gluten Free Grocery Guide” in the mail today. It couldn’t have come at a better time. There has been several times in the last few weeks that I have been standing in the grocery isle diligently reading the labels trying to figure out if something is gluten free or not. Now I have my essential guidebook to take to the grocery store with me to help make me feel more confident in my shopping choices.
There is a good number of people who have other food intolerance’s or allergies in addition to being Celiac or having Gluten Intolerance. Dairy is one of the most common food allergies/intolerance’s. And some people can have dairy, but just have an issue with the Lactose. Dairy free living can be challenging, but it is doable. We use lemons in baking, cooking, adding to water and other drinks. When we juice the lemon we are leaving behind a wonderful ingredient that is just usually discarded, the lemon zest. Lemon zest is great used in baked good, adding to savory cooking, and you can also make butter, oil, candied zest and more. Simply zest your lemon before juicing and you can use this delicious ingredient for future use. Store in a ziploc container and freeze until ready to use.
