Congo Bar
Is it a bar or is it a cookie? Or is it a cookie bar? It’s a Congo Bar!
Another great cookie recipe sent to me to convert for my GF friend Bonnie from Spokane. Bonnie has been at all of my events in the Spokane area. I call her one of my groupies. This is a lady with great enthusiasm and who really enjoys people. Thank you Bonnie for sharing your recipe with us!
Congo Bars

Directions
Preheat oven to 350°.
In a small bowl combine flour, xanthan gum, baking powder and salt. Mix and set aside.
In a mixing bowl, cream butter with sugar and vanilla until soft. Add eggs one at a time mixing well after each one. Scrape down sides of bowl.
With mixer running on low speed, slowly pour in flour mixture. Mix well. Scrape down sides of bowl. Add chocolate chips and nuts. Mix.
Spray a 9 x 13 pan with cooking spray. Spread batter evenly into pan. Bake for 30 minutes. Cool completely, cut into squares.
Note: To easily spread batter, spray rubber scraper with cooking spray.
