Raspberry White Chocolate Scones ~ Gluten Free & Egg Free 
Made with Mama’s Scone Mix

Scones are a delightful treat any time of the year. With fresh raspberries being in season they make a delicious mid morning or after dinner treat. Using Mama’s Scone Mix makes them super easy to make, your family, friends, and guests will think you worked really hard. We will keep it our secret that they are a cinch to put together! Let me tell you they are decadent, every last bite!

Ingredients

2 cups Mama’s Scone Mix
¾ cup heavy cream + 1-2 Tbsp. if needed (See below for dairy free)
1 heaping cup fresh raspberries
¾ cup white chocolate chips

coarse raw sugar for sprinkling

Directions

Preheat oven to 375º.

In a mixing bowl, combine Mama’s Scone Mix and cream. Mix until well combined, it will be a little dry at this point. Add raspberries and white chocolate chips, and mix well. Now it will be moist.

Place the entire amount of scone batter onto an ungreased cookie sheet. Sprinkle the top with extra scone mix or gluten free flour.

Press into a circle about 1 inch thick, leaving it a little thicker in the center for nice presentation.

Baste the top with cream. Sprinkle with coarse raw sugar. Using a large knife cut it into 8 pieces, leaving the circle in tact.

Bake for 30-35 minutes or until top begins to be slightly golden and bounces back when touched. (If unsure if its done, just remove from oven, gently cute one slice out and check the inside to see if its cooked. Should be moist, but cake like texture.)

Top with more fresh raspberries and whipping cream if desired. Tastes wonderful served warm!

Dairy Free ~ Scones are always best using real heavy cream. However, you can make them dairy free using any milk you desire, almond, rice, soy. Coconut Milk from the can works wonderfully as it has similar consistency as heavy cream.
