Cabbage Crunch Salad ~ Gluten and Soy Free

Mama’s Cabbage Crunch Salad is a refreshing salad that is super easy to make for summer dinners, potlucks and picnics. It is a nice alternative to the traditional coleslaw dressing that you normally find with cabbage. It is also packed full of other delicious vegetables, making it full of vitamins, bursting with color, and lots of crunch. The salad is big enough to serve a big family, to serve at a party, to have plenty of leftovers throughout the week. Or make a smaller salad and cut the recipe in half.

Gluten Free Tabbouleh Salad

Tabbouleh Salad is one of my most favorite salads I learned how to make in cooking school about 20 years ago. Yep, I said it, 20 years ago. Now I feel old. Anyway, Tabbouleh is a traditional Middle Eastern Vegetarian dish, that has fresh mint, parsley, tomatoes, cucumber, green onions, lemon juice, olive oil and sometimes garlic. It is traditionally made with Bulger Wheat or Cous Cous. Obviously, bulger wheat and cous cous have gluten, so I made my Tabbouleh with Quinoa. Quinoa is similar in texture and taste to bulger and cous cous and it is prepared the same way

Turkey and Rice Stuffed Peppers ~ Gluten Free Dinner

One of my biggest requests from Gluten Free Mama fans is, “What can we make for dinner that is gluten free and that the entire family will eat?” So I have been putting together my collection of Gluten Free Main Meals. In my opinion, it is much easier to make one meal than two. If one of us eats gluten free, then we all eat gluten free, at least when it comes to family meals. Zucchini Pizza’s ~ naturally gluten free!

Pizza night gets a whole new meaning when you shake it up and replace the crust with zucchini slices.  Not only is it delicious, it’s healthy, and super easy to make!
