The Super Bowl without some killer Cheese Crackers would just be a Bowl
The Super Bowl unites us all. We are drawn to the camaraderie for teams we favor, we find excitement wagering monies in the office pools, anxiously we wait to see the half time show and we are curious to know what advertising agencies dream up this year for commercials. Regardless of ones proclivity to professional sports, the Super Bowls reach is limitless.
Lately, wherever I go, whatever I may be doing, the acronym KISS continues to make its way into conversations around me. I am led to believe that these ripples are intended to gain momentum. I feel obliged to continue its promotion.
So… let’s all Keep It Simple Silly.
KISS… It is one of those common terms that managed to rise above the trite, passé, stale phrases that come and go with the seasons. There is a thread that weaves its’ way through each of us with such a simple yet profound term.
Advertising the slogan of KISS I offer up a recipe that is so simple it is silly, yet so incredible it is worthy to find its way to the table that separates the party from the party.
Keep on Keepin’ on!
Cheese Crackers
Servings: 2-4 Difficulty: easy
Ingredients
1⁄2 Cup Margarine or Butter, softened
2 Cups Sharp Cheddar Cheese, grated
1 Cup Gluten Free Mama’s Almond Flour
1 Tsp Seasoning Salt
Directions
Cream together the margarine and cheese. Add the flour and seasoning salt and mix together until the dough forms a ball. Divide the dough into 3 sections and roll each into a roll about 6″ long and 1 1⁄4″ to 1 1⁄2″ in diameter. Wrap in wax paper and chill until firm. The cheese rolls can be prepared ahead of time and frozen. When frozen the rolls can be sliced thinner.
Preheat oven to 400°. Cut dough into 1⁄8″ slices and place on an ungreased baking sheet. Bake for 10 minutes or until crisp and very slightly browned.
Makes about 4 1⁄2 dozen crackers. To learn more about Tim and for more delicious gluten free recipes you can also follow Tim at his blog
