Mama’s Basic Hamburger Bun Recipe with 4 Variations!

Mama’s Gluten Free Basic Hamburger Buns with 4 Variations!  ~Dairy Free & Egg Free Option 

Summer means BBQ and BBQ means Burgers and Burgers mean we need good tasting Gluten Free Buns. Mama made Onion Buns from Mama’s Basic Hamburger Bun Recipe. Mama’s Basic Hamburger Bun recipe can be made as just a Basic Bun or add your favorite toppings like Sesame Seeds, Poppy Seeds, Herbs, or Mama’s favorite Onion Buns.

To make the buns, you can use 4 inch cake pans by Wilton. They come in packs of three and you will need at least 6 pans, available at Amazon.com or stores like Micheal’s or Target.

Or you can use mini quiche pans that are at least 4-5 inches in width. I bought my ceramic mini quiche pans at a store called World Market, and you can order them online; www.worldmarket.com. In the picture you will see buns made with both pans. I made Poppy Seed buns using the 4 inch cake pans and I made the Onion Buns using the quiche pans. The quiche pans were a little wider, making for a thinner yet wider bun which, I think we liked better than the other pan which were a little on the thicker side, however, both work great. I hope you enjoy this delicious and easy to make hamburger bun all season long.

Mama’s Basic Hamburger Bun (See Variations Below)

1¼ cups warm water
1 heaping Tbsp. yeast

3 cups Mama’s Almond or Coconut Blend Flour
1½ tsp. xanthan gum
1 tsp. salt
3 Tbsp. sugar

2 eggs or Mama’s Flax Eggs, see below
⅓ cup canola oil or olive oil

Variations

Onion Buns– Mix in the batter ½ cup fresh minced onion, allow to rise for 2 hours, baste top with egg white wash or warm water, then add minced onion on top of the buns.
Sesame Seed Buns – Allow to rise for two hours, baste with egg white wash or warm water, sprinkle tops with Sesame Seeds.
Poppy Seed Buns – Allow to rise for two hours, baste with egg white wash or warm water, sprinkle tops with Sesame Seeds.
Herb Buns – Allow to rise for two hours, baste with egg white wash or warm water, sprinkle tops with Sesame Seeds. If desired, mix in two minced garlic cloves to batter.

Egg Free – Make Flax Eggs. Simmer 2 Tbsp. ground flaxseeds with ½ cup warm water over medium low heat for about 5 minutes or until thickened. Cool. This equals 2 eggs.

Directions

In a liquid measuring cup, mix together warm water and yeast. Set aside until foamy.

In stand mixer, add flour, xanthan gum, salt, sugar, and (minced onions for onion buns). With mixer running on low speed, slowly pour in yeast mixture, then oil, then eggs or flax eggs. Mix on high speed for 2 minutes.

Using a 2 inch scoop, scoop heaping scoops of dough into 6-7 four inch cake pans or mini quiche pans. Run your rubber scraper under hot water, and then use it to spread and smooth out the tops of the batter. Cover with dry towel and allow to rise for about 2 hours.

Mix together 1 egg white with 1 tsp. water and gently baste the tops of the bread. Sprinkle with desired topping, onions, sesame seeds, poppy seeds or herbs.

Bake in 400 degree oven for 25 minutes. Allow to cool for at least 30 minutes before slicing and serving.
