Hummus Pizza

Okay…if you like hummus, roasted veggies and flatbread then you are in for a treat! Two words to describe this interesting take on pizza is DE-LISH.  No seriously, it is.  The Kalamata olives and feta make it extra special too.  Make it without the feta and it is dairy free.  The only thing that I didn’t like about this pizza is that I had no one to share it with.  Now I am just going to have to make it again so that my friends can enjoy.

Hummus Pizza

Ingredients

Gluten Free Mama’s Multi-seed Flatbread or your favorite GF pizza crust
hummus

1 zucchini, halved and slice ¼ inch thick
1 red pepper, sliced
5-6 garlic cloves, sliced in half
1 cup cherry or grape tomatoes, sliced in half
3-4 Tbsp. pine nuts
2 pinches oregano
salt, to taste (about 2-3 pinches)
fresh ground pepper, to taste
1-2 Tbsp. olive oil or grapeseed oil

½ cup Kalamata olives, sliced in half
feta cheese

Directions Preheat oven to 400°.

Prepare zucchini, red pepper, garlic cloves and tomatoes. Spread evenly onto baking sheet. Add pine nuts, salt and pepper. Drizzle 1-2 Tbsp. oil over top of veggies. Toss veggie mixture with a wooden spoon.

Place in oven on upper rack. Bake for 10 minutes. Toss veggies with wooden spoon. Place back in oven for 10 more minutes or until tender. Allow to cool completely.

Generously spread a layer of hummus onto the top of flatbread. Spoon some roasted veggies onto the top of the hummus. Add some sliced Kalamata olives. Sprinkle with feta. Serve. DELISH!!!
