Mama’s Cheesy Onion Biscuits are so easy to make, and they can be used for Mama’s BLTA sliders, biscuits, or bread for your favorite sandwich. Mama decided to make her BLTA sliders out of them. Who doesn’t like Bacon, Lettuce and Tomato sandwiches? Make them even better with fresh avocado slices. I slathered the biscuit with my Mustard Seed Aoili, which added a burst of flavor to this classic. This sandwich is sure to be winner among family and friends, whether served on game day, at parties, or as a quick lunch or dinner any other day of the week.
This recipe is so easy to make that it takes less than 30 minutes from start to finish! I originally made it with Game Day Parties and get-togethers with friends and family in mind, but since making it, my family has made it three times just for quick weekend lunches. It is so perfect for after church lunch on Sundays. I think you will find lots of versatility using this recipe. If you don’t prefer BLTA’s then perhaps make a different sandwich using your favorite sandwich fillings. The biscuit also pairs nicely with any meal!
BLTA Ingredients (8-10 sliders)
1 batch Mama’s Cheesy Onion Biscuits
1 package bacon, cooked
2 tomatoes, sliced
Romaine lettuce leaves
1 avocado, sliced
1 batch Mustard Aoili
Ingredients
2 cups Mama’s Almond or Coconut Blend Flour
2 tsp. baking powder
1 tsp. xanthan gum
1/2 tsp. salt
2 Tbsp. fresh or dried parsley
1/4 cup green onions, chopped
1/2 cup butter or dairy free margarine, partially melted
1 cup milk (dairy, rice, nut, soy)
1 egg (or 1 flax egg)
1 cup cheddar cheese, shredded
Directions
Preheat oven to 400 degrees.
In a medium bowl, add flour, baking powder, xanthan gum, salt, parsley and green onions. Stir to combine.
Make a well in the center of flour. Add partially melted butter or dairy free margarine, milk, egg, and shredded cheese. Mix well.
Using a 2 inch scoop, place scoops of dough two inches apart on cookie sheet. Bake for 14-16 minutes or just until the tops begin to lightly brown.
GFM Tip These are drop biscuits, no need to roll out the dough. If you want to have flatter biscuits, lightly dust the tops of each scoop of dough with flour and gently press with the palm of your hand to flatten.
Mustard Aoili
Ingredients
1 cup mayonnaise
2 Tbsp. coarse grained dijon mustard
1 garlic clove, minced
1/4 tsp. sea salt
1 Tbsp. lemon juice
Mix together well.
Now it’s time to build the sliders!
Slice biscuits in half. Put a generous layer of mustard seed aoili on the inside of each half of the biscuit. Break bacon slices in half and place 2-3 halves onto the bottom of each biscuit, then layer with torn lettuce pieces just about the size of each biscuit, a tomato slice and 2 slices of avocado. Place the top half on top. Place on a serving plate and serve warm.
