August: Gluten Free Mama’s Heirloom Tomato Margarita Pizza

Growing up my family always had one of two kinds of pizza toppings, pepperoni, or pepperoni and sausage. Pretty boring if you ask me. Now don’t get me wrong a good pepperoni pizza is a must once in a while, but when you eat it every week for your entire life, you are ready for a change. What is your family favorite at your house? To Start Mama’s Pizza Night out with a bang, I am sharing with you one of my favorites, Heirloom Tomato Margarita Pizza. It’s a take on the traditional Margarita Pizza with a Mama twist. Traditionally, margarita pizzas don’t have red sauce, but instead a drizzle of olive oil, however, my family, we love our red sauce, so mine has red sauce. I also can’t leave well enough alone. It would be perfectly fine with mozzarella, tomatoes and basil like a good margarita has, but I put my twist on it, using heirloom tomatoes, red sauce, fresh mozzarella and of course, mine must have thin slices of fresh garlic. Fresh Mozzarella can be found in the deli section at your store. It is often packaged with liquid. It is softer and more moist than regular mozzarella, and I feel it offers a more unique gourmet flavor. Let me tell you, I made this pizza tonight for some extended family and it was given two thumbs up! I hope you enjoy Mama’s version of Margarita pizza.
Ingredients (Note this recipe makes 2-14 inch Heirloom Tomato Margarita Pizzas)
1 Mama’s Pizza Crust Mix (Makes two pizza crusts)
or 1-2 gluten free pizza crusts ***See note
pizza sauce*
2 each of heirloom tomatoes, red, yellow, orange, sliced into thin slices
2 – 8 oz balls of fresh mozzarella*, thinly sliced
1 cup fresh basil leaves, rinsed and dried
4 – 5 large cloves, peeled and thinly sliced
Sea Salt
*Optional – Balsamic Vinegar
Directions
Preheat oven to 400 degrees.
Prepare pizza crusts and directed on the package or from direction from your desired recipe.
Par bake crusts for 12 minutes. Remove crusts from oven. Spread a layer of pizza sauce on crust. Place fresh mozzarella slices about 1- 1 1/2 inches apart. Place tomato slices over the top of each crust, allowing all three colors to be evenly represented. Top with fresh basil, and sliced garlic.
Place back in oven and cook for about 12-15 minutes or until cheese is nicely melted.
Serve warm.
GFM Tip: Some gourmet pizza parlors will drizzle balsamic vinegar over the top when it is removed from the oven.
GFM Tip Don’t have fresh mozzarella? You can certainly use regular shredded mozzarella.
Dairy Free Option For dairy free, you can make it and just leave the cheese off, or use Daiya brand cheese.
Mama’s Easy Pizza Sauce
1 – 29 oz can of tomato sauce
1 pinch of baking soda
1 tsp. sea salt
1-2 Tbsp. Italian seasoning (or 3 Tbsp. fresh Italian herbs)
fresh ground pepper
fresh garlic, minced to taste
Heat all ingredients and simmer until ready to use.
This recipe is using Gluten Free Mama’s Pizza Crust Mix. You can certainly use any pizza crust you choose.
