Mama’s Hamburger Pie ~ Gluten Free

Mama’s Hamburger Pie is a delicious main dish that you will want to add to your gluten free dinner menu.  I grew up on Hamburger Pie.  It was a favorite in our household, however, I was the ONE holdout in the family.  When I was young, I couldn’t stand cheddar cheese.  So my mom would give me my piece, and scrape off the melted cheddar cheese.  Thank goodness, as I grew up, I eventually outgrew my dislike of cheese, I now love cheese.  I also started making this family recipe for my own family, although, I made some changes to it over time, giving it the “Mama” flare.  My kids have grown to love this dish too, but funny thing is, my picky eater, is the lone hold out when I make this.  She doesn’t like melted cheese either, imagine that!  It will be interesting to see if she outgrows that like I did as I grew and my tastebuds matured.  The recipe below is for a single pie, if you have a big family like I do, I recommend just making two.  If you are lucky to have any left, it makes for great leftovers the next day.

9 oz. Mama’s Pie Crust Mix (1/2 of the bag)
6 Tbsp. butter or dairy free margarine
3 Tbsp. spectrum shortening
1 egg white
4-6 Tbsp. cold water

Directions
Measure out half of Mama’s Pie Crust Mix to weight 9 oz.
Partially melt butter.  Add butter and shortening to pie mix.  Add egg white and 4 Tbsp. of water to mix.  Cut the ingredients in with a pastry cutter or fork until the dough is mealy.  Add water as needed to form a smooth dough.  Dough will be somewhat moist and be easy to roll out.
Spray two pieces of wax paper with cooking spray.  Roll dough between wax paper about 1/4 inch thick and 12 inches in diameter.  Gently peel back top piece of wax paper.  Carefully flip pie crust over onto 8 or 9 inch pie plate.  Gently peel back remaining layer of wax paper.  Gently trim pastry around pie plate leaving 1/2 inch overhang.  Make small repairs as necessary.  Fold over hang under and flute edges or press edges with a fork.
Fill pastry as individual recipes require.
