Gluten Free Oven Pancake Bites
~Easy to Make Breakfast with Mama’s Pancake Mix

Saturday Morning Treat, Before School Easy Breakfast, Afternoon Snack ~ Whenever you make these delicious pancake bites will sure to delight all the hungry mouths ready to eat them.  It’s just another take on the traditional pancake breakfast, but fast and fun.

Make it easy by starting with Mama’s Pancake Mix or use one of Mama’s Pancake recipes on her blog or in her cookbooks Mama’s Best Baking Recipes or In the Kitchen with Gluten Free Mama.  You can make them all one flavor, or mix it up with variety like I did, and offer a few different flavors to satisfy all the different desires among your family.

Mama’s Pancake Mix

I made Apple Cinnamon, Blueberry, and Banana.  They were each a hit with my family.  My favorite was the banana, my daughter Gracie’s favorite was the Apple Cinnamon and my husband Rob love the Blueberry!  You can add any flavor you want, m&m’s, chocolate chips, raspberries, huckleberries, pumpkin, flax seeds, or even leave them plain.

First, preheat oven to 350°.  I made the batter following the instruction on the back of Mama’s Pancake Mix bag.  Then divided the batter into three bowls.  I mixed together 3 Tbsp. sugar with ¼ tsp. cinnamon and cut up and apple.  Then mixed it in with one bowl.  I mashed up ½ of a large ripe banana and mixed it in with the second bowl.  You could even use the entire banana.  Then with the third bowl, I added a handful or two of blueberries.  Just eyeball it to get desired amount.

Then, lightly spray muffin tin with cooking spray.  Fill each cup ¾ full with pancake batter.  Place in oven and bake for about 10 minutes.  Touch to see if they bounce back when touched.  Remove from pan and serve.  You can serve with syrup, powdered sugar or just eat them plain.  Send them in school lunches with kids, have them as an afternoon snack, this idea doesn’t have to be just for breakfast.  Enjoy!
