Easy Chicken Salad Sandwiches ~ Made with Mama’s Easy Biscuits
Gluten Free Mama makes summer lunches even tastier. Try this delicious Chicken Salad Sandwich recipe on your busy summer days. It is simple and very quick to throw together, and allows you more time for basking in the sun or hanging out with friends. You can serve it on a gluten free biscuit, gluten free bread, or on a bed of lettuce.
Easy Chicken Salad Sandwiches
1 Batch Gluten Free Biscuits (See recipe below)
1 can GF chicken breast
1 apple, diced (Red Delicious, Gala, Fuji, Johnny Gold)
½ cup grapes, quartered
½ cup celery, diced small
⅓ cup chopped nuts, walnuts or pecans
2 Tbsp. mayonnaise
2 Tbsp. sour cream
2 Tbsp. plain yogurt
3 tsp. course mustard or dijon (not yellow mustard)
Pinch of salt
Fresh ground pepper, to taste
Open can of chicken and add to medium bowl. Break up chicken into small pieces with fork. Add apple, grapes, celery, and nuts.
In a small bowl, mix together mayonnaise, sour cream, yogurt, mustard, salt, and pepper. Add all at once to chicken mixture. Mix together until all ingredients are combined.
Serve on a gluten free biscuit or on a bed of fresh lettuce.
Makes 6-8 servings.
Gluten Free Buttermilk Biscuits
1½ cups Mama’s Pancake Mix
¼ cup butter or dairy free margarine, melted
¾ cup buttermilk*
*Make it dairy free by using your rice, nut, or almond milk mixed with 2 tsp. cider vinegar.
Directions: Preheat oven to 400°.
In a medium bowl, combine pancake mix, melted butter, buttermilk and egg. Mix well by hand. Use a large 2 inch scoop and drop biscuit dough onto an ungreased cookie sheet. Press lightly to flatten to about ¾ inch thickness. Bake for 14-16 minutes.
Makes 7-8 biscuits.
