It’s 9:30pm, your house is quiet, and you want a late night snack. This is where I found myself one night. After looking around the web I decided to make a mug cake. You know, one of those single serve cakes that you bake in the microwave in a coffee mug. The recipe I found was for a plain, Gluten-filled cake. Since I’m a Celiac and not a fan of plain, I decided to take the dish to the next level.
Here is my recipe for Gluten Free Chocolate Peanut Butter Mug Cake
Gluten Free Chocolate Peanut Butter Mug Cake

Ingredients
- 2 tbsp Gluten Free Mama’s Almond Flour Blend
- 3 tbsp sugar
- ¼ tsp baking powder
- 1 tbsp cocoa powder
- 2 tbsp vegetable oil
- 1 egg
- 3 tbsp peanut butter
Instructions
- Whisk together all the ingredients in a small bowl. Pour into a large coffee mug. Cook in the microwave for 1.5 to 2 minutes. Allow to cool, then eat right out of the mug.
