Mama’s Ginger Peach Scones ~ Gluten Free
Mama’s Scone Mix
Scones are a perfect treat any time of the day and any time of year. They are delightful served with breakfast or with a cup of tea as an afternoon treat. I love to curl up on the couch with a cup of tea and warm scone and watch a movie.
When I am expecting guests, I will throw a quick batch of these scones in the oven, timing them to come out of the oven just after they arrive. I will spend the time while the scones are baking to continue getting dressed or cleaning up a little. When the guests arrive, they arrive to the sweet aroma of fresh baked scones. It is a great way to welcome your friends to your home. The great thing is that they think I went to a lot of work, but really it took less than 5 minutes to throw together.
Mama’s Scone Mix will make at least 3 batches of scones. There are 4 basic recipes on the back of the package for Cranberry Orange, Blueberry Almond, Lemon Poppy Seed and Chocolate Chip. For more scone recipes you can log onto the website. Online you will find three basic styles for making your scone; one with just cream, one with cream and an egg, one with butter, cream, and egg. Choose your favorite base and add your favorite ingredients or follow one of Mama’s recipes. The scones have the best texture and are more authentic if you use heavy cream. I am working on adapting it for dairy free, but haven’t had a lot of time recently, but soon!
Ginger Peach is my favorite recipe using this mix. Usually with my scones I will baste the tops with cream and sprinkle with sugar just before baking. With the Ginger Peach Scones I skip that step and right when they come out of the oven I baste them with peach jam. You can buy peach jam at the grocer. Every summer I buy or pick a flat of peaches and can my own peach jam which makes these scones an extra special treat. Enjoy!
GINGER PEACH SCONES
2 cups Mama’s Scone Mix
2 Tbsp. crystallize ginger, minced
1 cup fresh or frozen peaches, diced
¾ cup cream
1/3 cup peach jam or 2 Tbsp. sugar
Preheat oven to 400°. In a mixing bowl combine mix, crystallized ginger and peaches. On low speed add egg and slowly pour in cream. With lightly floured hands place dough on ungreased baking sheet. Press into circle about ¾ inch thick, leaving slightly thicker in center. Slice into 8 slices.
Bake for 25-30 minutes or until golden brown. Remove from oven and baste with jam. Serve warm.
