Gluten Free Chocolate Chip Banana Bread

Today is Banana Lovers Day!  So of course, we have to celebrate!  Let me introduce you to Heartland Gourmet’s Gluten Free Banana Bread Mix!  This mix is a breeze to make, just add the mix, oil, water and two eggs.  Mix and pop it into a pan and 30-40 minutes later your house will smell great and a delicious banana bread will be coming out of the oven.  All of our Gluten Free Mixes are certified gluten free and processed in a quality food safety certified gluten free environment.  So you can feel safe eating gluten free with Heartland Gourmet.

In honor of Banana Lovers Day, I made up a batch of our Gluten Free Banana Bread Mix and added some fun to the mix.  Whenever I have ripe bananas, instead of throwing them away, I cut them into small pieces and freeze them in an airtight container.  Then when I want to make a shake or in this case banana bread, they are ready to use.  I threw in a small banana’s worth of frozen chunks and since my kids were home added 1/2 cup chocolate chips. Pour the batter into your favorite bread pan, spread evenly and make three slashes across the top.  Now keep in mind the mix is ready to use and you don’t have to add the extra’s that I added unless of course you just want to.

 

I baked mine for 45-50 minutes even though the box says 30 minutes, because I am baking from 3200 feet alt. in Montana.  Ovens and altitudes do alter baking times so you will know it’s done when you touch the top and the bread bounces back.  It was a hit at my house and I know it will be a hit at yours too!

NOTE: Extra frozen banana pieces and chocolate chips not included in mix.  🙂Happy Baking!
