After a long drive through the mountains of Montana this weekend, I found myself staring at the beautiful landscape beginning to change to colors of rich yellow, deep orange, and rust brown. It was so beautiful and that was just the beginning! No matter what part of the country you find yourself in right now, you may be noticing the changing of seasons.
To welcome Fall in, I can’t think of a better time to introduce you to Heartland Gourmet’s Gluten Free Apple Cinnamon Muffin Mix. Don’t worry if you aren’t gluten free, we have a regular version too! Today though, I enjoyed making our gluten free version. They made my house smell like fall and were wonderfully moist and delicious. The entire family enjoyed them.
Many of you know that gluten free baking isn’t easy, but what is easy is baking gluten free with Heartland Gourmet. We have taken the out the guesswork of trying to convert your recipes and help bring traditional favorites to you in one convenient box. Seriously, it is as easy as mixing some butter and adding and egg and water. Before you ask, yes you can make this dairy free. Just replace the butter with equal parts dairy free margarine or coconut oil. If choosing coconut oil, soften it in microwave for about 20-25 seconds before adding it to the mixing bowl. If you need to be egg free, use 1 flax egg (see below) or equivalent to one egg of energ egg replacer. After mixing the ingredients allow to rest in mixing bowl for about 10 minutes or so before filling muffin cups. Then bake. It’s as easy as 1, 2, and 3! If you live in higher altititudes bake for an extra 5-7 minutes. You will know they are done when the tops bounce back when touched.
Egg Free: To make a flax egg, simmer over low heat, 1 Tbsp. ground flax seed with 1/4 cup water, until thickened.
