Gluten Free Flax Pancakes

Mix all ingredients.  Heat skillet over medium heat.  Drop 1/3 cup batter onto buttered skillet forming a circle with back of measuring cup.  Flip pancakes when bubbles begin to form and underside is golden brown.  Cook until both sides are golden brown.

Lemon Fig Cake

I have teamed up with G-free Foodie for doing recipe conversions on their website. I also accept them on my website as well. Anyway, about a month ago, a recipe came in called Lemon Fig Cake. Hmmm…I sat on this one for a while. Sounded interesting. Figs??? The truth is the only time I have every had a fig was about 3 years ago at a Christmas party. Someone made Cream Cheese Stuffed Figs. Gluten Free Cottage Dill Popovers

Popovers are great for breakfast, lunch, dinner or even snack! They are easy to make and they appease even the pickiest of eaters. I have had some extra fresh dill in my house all week and decided I needed to use it up before it went bad. My favorite ingredient paired with dill is small curd cottage cheese. It may not sound appetizing when you hear it…but believe me, it is GOOD!

Mama’s Gluten Free Flax Pancakes

Who doesn’t like breakfast, and who doesn’t like breakfast for dinner.  Better yet, who doesn’t like Pancakes?  I know my family and I can have pancakes anytime of day or night.  Did you know you can do all kinds of variations of pancakes with Mama’s Pancake Mix?  You could add chocolate chips, blueberries, or how about 1 tsp. cinnamon with 1 cup diced and peeled apples.  My kids love m&m’s in theirs.  Add 1/4 cup of cocoa with 1 Tbsp. of Instant Espresso and you have Mocha Pancakes.  Or you just keep it simple add some ground flax and whole flax for a healthy start to your day.

Sweet Pepper Monterey Quiche

I love sweet peppers!  I love quiche.  Quiche doesn’t have to be just for breakfast.  Make it for dinner and make your family very happy!  It is great served with bacon or sausage or a side of fresh fruit and gluten free toast.Ingredients Mama’s Pie Crust Mix Or 1 single GF pie crust½ cup each, red pepper, orange pepper, yellow pepper1 Tbsp. butter4 eggs¾ cup heavy cream¾ cup milk⅛ tsp. pepperPinch of salt⅓ cup fresh cilantro, finely chopped3 green onions, chopped1 cup Monterey Jack Cheese or Monterey Cheese BlendOptional:  Fresh salsa for garnish Directions  Preheat oven to 400°. Lemon Zucchini Bread (Dairy Free)

Lemon Zucchini Bread (Dairy Free) 1¾ cups Mama’s Almond Blend or Coconut Blend Flour1 tsp. ground ginger2 tsp. baking powder¼ tsp. baking soda½ tsp. salt1½ tsp. xanthan gum½ cup walnuts (optional) ⅔ cup oil (canola, safflower, soybean)2 Tbsp. fresh lemon juice2 eggs1¼ cups zucchini, grated1 cup sugar1 tsp. lemon zest Glaze ½ cup powdered sugar, 1 Tbsp. lemon juice, 1 tsp. lemon zest Directions Preheat oven to 350 °. In a small bowl combine flour, ginger, baking powder, baking soda, salt, xanthan gum and walnuts. Mix together and set aside. I have always referred to Lexie as the Gluten Free Baby. However, since she is turning ten years old next week she decided it was time for a name change. She wants to be called “Mini Mama” now.
