Gluten Free Lavosh Crackers

You say what? Lavosh crackers are a traditional unleavened bread, or otherwise known as Armenian Flat Bread. Lavosh is pronounced LAH-voshe.  These crackers are super thin, super easy to make, and super addictive.  My daughter and I have been snacking on them all afternoon.  You can make them with any sort of topping you like, but traditionally they are topped with sesame seeds, sea salt or cracked pepper.

Mama’s Italian Polenta Cheese Bake

Portuguese Sweet Bread ~ Gluten Free

Portuguese Sweet Bread (Gluten Free) Ingredient 1 ¼ cups milk (dairy, rice, nut, soy) ¼ cup butter or dairy free margarine 1 Tbsp. yeast   3 ½ cups Mama’s Almond or Coconut Blend Flour 1 ½ tsp. xanthan gum 1 tsp. salt ¾ cup sugar   3 eggs 1 tsp. cider vinegar   1 egg for basting   Directions Warm milk and butter until melted.  Remove from heat.  Allow to cool until about 115°.   Sprinkle yeast over top of milk mixture.  Set for 3-4 minutes.    In a mixing bowl add flour, xanthan gum, salt and sugar.  With mixer running on low speed, slowly pour in yeast mixture.  Add eggs, one at a time beating well after each addition.  Add cider vinegar.  Beat...

Mix all ingredients.  Heat skillet over medium heat.  Drop 1/3 cup batter onto buttered skillet forming a circle with back of measuring cup.  Flip pancakes when bubbles begin to form and underside is golden brown.  Cook until both sides are golden brown.

Mama’s Chocolate Chip Cookies

Sometimes it is the simple things in life that make me happy, like chocolate chip cookies and a tall glass of cold milk. Are you a cookie dough eater or a cookie eater???  I think I am both!  So are my kids.  Against the rule of not eating raw eggs, we still enjoy a spoonful of cookie dough every time we make cookies.  Then of course we have to lick the bowl too!

Summer Fruit Tart ~ Gluten Free

In a medium bowl combine flour, sugar, salt and xanthan gum.  Make a well in center.  Add partially melted butter, shortening, egg white and cold water.  Cut flour into liquid ingredients with fork or pastry cutter until well blended.  Use lightly floured hands to incorporate the rest of flour.

It broke my heart when we walked by the Girl Scouts selling cookies this year. It has never been an issue in the past, but now that Lexie is almost 7, I see the disappointment in her eyes when sherealizes that they are not gluten free. The sweet little girl she is says, “Mom, we should get some for Cassie, because she really likes them.” I respond, “Lexie, that probably wouldn’t be fair since you can’t eat them too.” Lexie in her sweet little voice, “That’s okay mom, you can just make me some that are gluten free.” Being the sucker I am, oh, I mean the good mom that I am, I told her I would.

Gluten Free Gingerbread Houses a Holiday Tradition

Gingerbread houses are a tradition in my family.  I started making this a tradition when my first born, Gracie, was nearly 2 years old.  I can still remember the innocence she had as she placed each candy onto the house, not in any particular place for any rhyme or reason. When the kids were young I had to be very careful about when I told them we were going to do the houses.  If I wasn’t careful I would pay the consequences of hearing constant nagging and whining until I just would drop everything to get them started.

Gluten Free Sausage Balls — Party Appetizer

Make the with Italian Sausage or Turkey Sausage, Easy to Make and a Fan Favorite! Well this is my first “New” recipe that I have created since my brain surgery in November. This was a modified recipe, based off a sausage roll my mom made using Bisquick growing up. Cottage Dill Bread

Cottage Dill Bread, another classic bread recipe that is perfect anytime of day. This is a perfect bread to serve at breakfast or brunch, or make sandwiches with it for lunch. Typically, Cottage Dill Bread is made in a round shape. To achieve the round shape for gluten free breads, bake in a 7 or 8 inch round casserole dish.  A 8 inch round Corningware Dish works great or you could used a round springform pan, or deep sided pie pan.

Hummus Pizza

Okay…if you like hummus, roasted veggies and flatbread then you are in for a treat! Two words to describe this interesting take on pizza is DE-LISH.  No seriously, it is.  The Kalamata olives and feta make it extra special too.  Make it without the feta and it is dairy free.  The only thing that I didn’t like about this pizza is that I had no one to share it with.  Now I am just going to have to make it again so that my friends can enjoy.

G-Free Oatmeal Raspberry BarsDelicious! One word describes this tasty treat. I think this Raspberry Bar heads to the top of my favorites list. Gracie, my oldest daughter and I, tried to convince my other daughters and their friends that they would not like these bars. Unfortunately, our tactics did not work and we eventually had to give in and share. There is only one slice of these delicious bars setting on my beautiful glass cake plate. Lemon Fig Cake
