Easy Gluten Free Biscuits

This is one of the easiest Gluten Free Biscuit recipe you will ever find and it is delicious!  I made it using Mama’s Pancake Mix, click here.  That is what makes it easy, no measuring out lots of ingredients, it’s all ready to go.  Part of Mama’s Back to the Basic Recipe Collection.

You can make this recipe dairy free by using any dairy free milk, rice, nut, soy, etc., and adding 2 tsp. vinegar to the milk.  You can even leave the vinegar out if you don’t want a “buttermilk” type recipe flavor.  It tastes great both ways.

Ingredients:

1 ½ cups Mama’s Pancake Mix
¼ cup butter or dairy free margarine, melted
¾ cup buttermilk* or dairy free milk
1 egg

* This recipe can be made dairy free by using rice, soy, or nut milk with 2 tsp. of cider vinegar added. You may need to add 2 Tbsp of extra flour.

Makes 7-8 biscuits.

Directions: Preheat oven to 400°.

In a medium bowl, combine pancake mix, melted butter, buttermilk and egg. Mix well by hand. Using a large 2 inch scoop, drop biscuit dough onto an ungreased cookie sheet. Press lightly with lightly floured hands to flatten. Bake for 14-15 minutes.
