Gluten Free Fudgy Brownies, Dairy free, Egg Free, Vegan and Low Carb too! Guest Post

Today, I am excited to introduce to you a newer blogger friend of mine who has been so gracious to guest post and share one of her favorite gluten free recipes with us, Dark Chocolate, fudgy, Nutritious Zucchini Brownies.   Get this my friends, they are not only gluten free, they are Dairy Free, Vegan and Low Carb.  I know you have been waiting for a recipe like this! Aren’t we lucky for her to share this with us?  Her recipe does call for straight rice flour, however, Gluten Free Mama’s Almond or Coconut Blend Flours would be fine substitutes too if you don’t have rice flour readily available.  Just you will have to make changes for carb count.

Nóri is a fairly new blogger to my scene as I just met her recently.  For my viewers who are egg free, dairy free, vegan and sometimes even need creative alternatives for sugars, she will be one to watch as she specializes in these sorts of recipes.  And for my viewers who are from the European countries you will be happy to hear she is European too.  She is Hungarian, also know as Magyar, and has both English and Magyar version on her website.  Did you know there is a huge Hungarian community in America and Canada too?  It is true.  You will also find Hungarians in Hungary or course, but scattered through countries like Slovakia, Romania, Ukraine, Germany, United Kingdom, Brazil, Austrailia, Columbia, Chile, and Argentina.  This was new information for me and fun to learn more about.  I encourage you to learn more about Nóri and her culture by doing some fun web searches today.

Hi Gluten Free Mama viewers!  Rachel gave me this great opportunity to guest post on her blog this week while she is recovering from her recent MS flare.  I am a creative foodie, ex-PCOS patient, mom of a little baby girl, scientist, coffee lover to name a few things that come to mind. I have been blogging about eating sugar-, gluten- and dairy-free on a moderate carb (160g CH/day) diet for years, with recipes that are mostly egg-free and vegan, too. Sugar-free means no sugar, not even unrefined ones and gluten-free means oat-free in my book.

Below are Nóri’s ingredients to her recipe, but for the directions, click here, so you can see her entire post. In parenthesis you will see the american term, and what they are for.  Also, Nóri mentions in her blog that when zucchini is not in season you can used finely grated apples. Nóri was already so kind to change the grams into cups for us too.  I imagine someday we will all be on the grams system, but until then…

Dark Chocolate Fudgy Brownies, Gluten Free, Vegan, Low Carb, Egg Free, Dairy Free

Full Recipe for Nori’s Dark Chocolate Fudgy Brownies,Gluten Free , Dairy Free, Egg Free, Vegan and Low Carb

Ingredients

  • 150g or 1 1/4 cups of white rice flour
  • [i](You can also use Mama’s Almond or Coconut Blend Flour)[/i]
  • 150g or 1 cup of almons, finely ground
  • [i](almonds ground finely, or almond meal)[/i]
  • 2 teaspoons of ground espresso
  • [i](Use ground espresso beans or instant espresso here)[/i]
  • 1 teaspoon bicarbonate of soda
  • [i](baking soda)[/i]
  • 1 pinch of salt
  • 1 tablespoon of chia seeds, freshly ground
  • [i]This will be for the egg replacement she describes in her directions, you can also use the flax eggs)[/i]
  • 200g or 7 ounces of dark chocolate
  • [i](About 1/2 cup Hersheys and Ghiradelli and Gadoba make dark chcocolate)[/i]
  • 3 tablepoons of coconut oil
  • 100g or 1/2 cup of plant milk
  • [i](carb count is based on soy or almond milk) (You can use Almond, Cashew, Hemp, Soy, Rice)[/i]
  • 1/2 teaspoon of stevia powder
  • 1 teaspoon of apple cider vinegar
  • 1 teaspoon of vanilla extract
  • 1 medium zucchini, finely grated (500g grated zucchini)**
