Gluten Free Ramen Noodles


Ever wish you could just make some gluten free Ramen noodles for lunch or a snack?  Well, now you can.  All you need are some gluten free rice sticks or stir fry rice noodles, often found in the Asian isle at your supermarket.  In large cities you can get them more affordable at the Asian markets.  

I used to buy ramen noodle packages from the grocery store, take out the seasoning, throw away the wheat noodles, and then add the seasoning to my own rice noodles, making them just as I would regular Ramen noodles.  So why do that and be so wasteful, when you can make your own ramen noodle spice mix.  So I made my own mix.  Now you can use this mix in more than one way.  I will show you two ways today.  In this post, making ramen noodles, and it the next post, as Jazzed Up Chicken Broth, which is delicious on those days you need a liquid diet or are a little under the weather.  The mix will make several servings. When making the mix remember that Tbsp. = Tablespoon and tsp. = teaspoon.  I don’t want to you accidentally put in 1 Tablespoon of pepper when it call for 1/4 teaspoon, that would not be good!  Just store leftovers in an airtight container in your spice cabinet for the next time.  

Ingredients 

Rice noodles, your choice (eyeball the amount, enough when boiled to fill a normal sized bowl)

Mama’s Gluten Free Chicken Soup Spice Mix 
Ingredients

4 Tbsp. GF chicken boullion powder *

4 tsp. parsley 
2 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. black pepper
1/4 tsp. celery salt (Optional, it’s great with it, but not a must have)

Directions

Mix together a batch of Mama’s Gluten Free Chicken Soup Spice Mix.  Store in an air tight container.  

Boil rice noodles per package instructions or until tender.  Usually it will take about 3 minutes.  Test one noodle to see if its done.  Reserve desired amount of water into your serving bowl, 1 cup of liquid is about right, but each person makes ramen noodles their own way.  Drain off the remaining water by pouring the noodles into a colander.  Place noodles into serving bowl with reserved water.  Add a heaping 1 tsp. of Mama’s GF Chicken Soup Spice Mix over noodles and stir to combine.  
Eat warm!

GFM Tip Chicken bouillon is not all Gluten Free so look at labels.  I used Herbox this time, it’s by Hormel.  There are also kinds that are MSG Free and Gluten Free.  Look at your health food store for organic bouillon if desires, just at least make sure it is gluten free.
