Mama’s Pico De Gallo is a cinch to make and a delicious and healthy snack served up with a bowl of gluten free corn chips or paired with Mama’s Cilantro Hummus.  Or make it and use it as a garnish on your favorite weeknight dinner meals, such as tacos, enchiladas, chili, casseroles and more.
Mama’s Quick Pico De GalloIngredients

2 Roma tomatoes, seeded and diced
¼ cup sweet onion, diced
2 green onions, chopped
¼ cup cilantro leaves
1 garlic clove, minced
½ jalapeno, seeded or to taste
2 Tbsp. lime juice, (about ½ of a lime)
salt, to taste

Prepare all ingredients and mix together in a small bowl. Serve with corn chips or with Mama’s Cilantro Jalapeno Hummus. Or try it as a topping on Street Tacos, Enchiladas, Taco night or any Mexican flavored dishes.
