Gluten Free Mama’s Green Bean Casserole GF French Fried Onions

Gluten Free Green Bean Casserole, GF French Fried Onions and GF Semi-Condensed Cream Soup And a video tutorial on how to make this traditiona Thanksgiving dish!

Green Bean Casserole is a traditional Thanksgiving and Christmas Holiday favorite.  Due to the fact that it is full of gluten, gluten free folks have not been able to enjoy this holiday favorite.  Not anymore, Gluten Free Mama not only made a gluten free version of this delicious casserole, she put her own holiday twist on it.  Check out the recipe below and be sure to check out the You Tube Cooking Lesson.

Green Bean Casserole

The casserole itself is pretty easy to make. But first we need to make a few essential ingredients. The traditional casserole calls for condensed mushroom soup. I created a gluten free semi- condensed version of the favorite. So lets mix up a batch of it first. This mixture makes several batches of soup.  Mix all the ingredients and store in an airtight container and keep it on hand for whenever you need a gluten free condensed soup for your favorite casseroles or when you would like a cream soup on those cold winter days.

Mama’s Semi Condensed Cream Soup

Ingredients

2 cups instant milk powder (or dairy free equivalent)
½ cup Mama’s Almond or Coconut Blend Flour
½ cup cornstarch
½ cup instant potato flakes
¼ cup GF instant chicken bouillon powder
2 Tbsp. minced onion
2 Tbsp. parsley
½ tsp. thyme
¼ tsp. pepper
1 tsp. onion powder
1 tsp. garlic powder
½ tsp. ground mustard
¼ ground pepper

Directions

Add all ingredients to a bowl.  Mix well.  Store in an airtight container until ready to use.

For Green Bean Casserole …..For Condensed Soup: Mix 1/2 cup mix with 1 ½ cups water.  Bring to boil over medium heat stirring constantly for 3-4 minutes or until thickened.  (Equivalent to 1 can of condensed cream of mushroom soup)

Other Variations

Cream of Mushroom  Add ½ cup diced mushrooms
Cream of Chicken  Add ½ cup diced chicken
Cream of Celery Add ⅛ tsp. celery salt and ½ cup chopped celery
Cream of Broccoli Add ½ cup chopped broccoli
For Soup mix together ⅓ cup of mixture to  1 ½ cups -2 cups  water, bring to boil, stirring constantly until thickened.  Reduce heat and simmer until ready to use.

Allow condensed soup to cool and use to assemble Green Bean Casserole.

Mama’s Semi Condensed Cream Soup ~ Perfect for soup or use for your favorite casseroles that call for cream of mushroom or cream of chicken soup. This is a dry mix and makes enough for several batches.

Ingredients

Now it’s time to make the French Fried Onions that go on top of the Green Bean Casserole. Now I highly recommend making a double batch, because if your family is like mine, they will start munching on these and they will be gone before they reach the casserole!  Between me and my kids the extra French Fried onions we made never made it to the air tight container.  They were gone within 2 minutes of finishing the video cooking lesson and placing the casserol into the oven.  Yum!!!

Gluten Free French Fried Onions

Ingredients

1-2 large onions (Yellow or Sweet)
1 cup milk (dairy , rice, nut or soy)
1 egg, (If you are egg free, omit the egg.
The batter just won’t be as fluffy.)
2 cups Mama’s Almond or Coconut Blend Flour
1/4 tsp. salt
1/4 tsp. garlic powder
Fresh Ground Pepper, to taste

Salt for after the onions come out of fryer
Oil for Frying (canola, vegetable, safflower, coconut)

Directions

Slice onion into thin strips or rings, about 1/4 inch thick slices. In a small bowl whisk together egg and milk. Soak onion slice in milk mixture for 1-2 min.
In a large bowl, combine flour, salt, garlic powder and some fresh ground pepper. Take some onions out ofmilk mixture allowing excess liquid to drip off. Place in the bowl with flour mixture. Toss well to coat the onions.

 

Fry in deep fat fryer at 375 degrees for 3-4 minutes or until onions are golden brown. Lightly separate onions halfway through and check often so that they don’t burn.
Remove from fryer and flip over onto a paper towel lined plate. Sprinkle lightly with salt and allow to cool.

Repeat. Store in air tight container for up to 2 weeks.

**If you don’t have a deep fat fryer, heat oil in a sauce pan to 375 degrees. Be careful and watch the entire time to prevent grease fires or splattering. Keep kids away from stove when frying with oil. Use the onions to assemble Green Bean Casserole. Recipe above.

Now we can assemble our Green Bean Casserole. Now you have a choice you can make it traditionally, or you can add Mama’s twist on it adding cranberries. The cranberries with a little bit of orange zest just adds a little punch of added flavor.  

Mama’s Green Bean Casserole

Ingredients

4 cups green beans, french cut
1½ cups Mama’s Condensed Soup (See Below)
1 cup fresh cranberries, sliced in half (optional)
Orange zest of 1 orange (if you use cranberries)
1½ cups Mama’s GF French Fried Onions, (See Below)
Fresh Ground Pepper to Taste

Directions

Preheat oven to 350°.
In a sauce pan,  over medium low heat simmer green beans, cranberries and orange zest in a little water with salt and pepper to taste for about 8-10 minutes.  Drain.

In a casserole dish mix green beans with 1 1/2 cups of Mama’s prepared Cream Soup mix.  Stir in 3/4 cup of French fried onions. Use remaining 3/4 cup French fried onions and place on top of the mixture making a 2 inch perimeter of onions around the dish.

GFM Tip Use a decorative dish like a decorative pie dish, an oval dish, corning ware, or colored casserole dish.  The prettier the dish the prettier the final product.  Presentation is just as important as taste.
