Gluten Free Pita Bread

1 pkg. Mama’s Pizza Crust (Remove ¼ cup of mix and set aside)

1¼ cups warm water
1 Tbsp. yeast (or use yeast packet included with mix)
1 tsp. sugar or honey

1 egg
2 Tbsp. olive oil

Directions: In a mixing bowl, add Mama’s Pizza Mix. Remove ¼ cup of mix and set aside.
In a liquid measuring cup measure out warm water, add yeast packet and sugar. Mix together and set aside until foamy.
With mixer running on low speed, pour in yeast mixture. Add egg and olive oil. Mix on high speed for 2-3 minutes. Scrape down sides of mixing bowl and remove from mixer.

Spray large pizza pan or baking sheet with cooking spray. Using a 2 inch scoop (or ¼ cup measuring cup) scoop dough and place on pan. Sprinkle dough with flour. Gently press dough into a circle shape about ¼ inch thickness. Repeat with remaining dough.

 

Cover dough with dry towel. Allow to rise in warm place for 1- 1 ½ hours. Meanwhile preheat oven to 400°.

Place in oven and bake for 18-20 minutes. Remove from oven. Allow to remain on baking sheet for 1-2 minutes then remove to cooling rack. Allow to cool for 10-15 minutes before serving.

Serve with your favorite hummus or dip. Enjoy!
